spicy salmon dip

Cheese Sticks
Start to Finish: 40 minutes
Serves: 16

Ingredients:
1 2-lb package Farm Rich® Cheese Sticks
1/3 cup extra-virgin olive or canola oil
2 red onions, coarsely chopped
1 green pepper, coarsely chopped
2 garlic cloves, finely chopped
4 scallions, coarsely chopped
1/2 cup fresh parsley, coarsely chopped
2 cups heavy cream
1 tsp dried basil
1 tsp dried thyme
1 lb smoked salmon, chopped
1/2 - 1 tsp hot chili sauce
2 tsp salt
2 tsp ground black pepper

Preparation:

HEAT oil in large saucepan over medium heat until hot. Add onions, pepper, and garlic to saucepan. Cook for 10 minutes or until vegetables are tender, stirring occasionally.

REDUCE the heat to medium-low. Pour cream into saucepan. Bring to a simmer, stirring constantly.

STIR in scallions, parsley, basil, and thyme. Continue to simmer, stirring constantly, until the sauce thickens and is reduced by one quarter.

ADD the salmon, chili sauce, salt, and pepper. Cook 5 minutes.

PLACE dip in a decorative bowl.

PREPARE Cheese Sticks according to package directions. Serve Cheese Sticks alongside salmon dip.
